Alvin's Mac n' Cheese

Mama got this recipe from an old friend and it is staple comfort food in our family. I actually haven't looked at the recipe in years.... this is as best as I remember the amounts because I just wing it.

3 Cups macaroni
 - Cook the macaroni according to directions on the package.

White Sauce
2 Tablespoons oil
  -Heat oil on the stove top in a oven proof dish. (I use my enameled cast iron casserole)
5 Tablespoons flour
1 Teaspoon paprika
1/2 Teaspoon salt
1/4 Teaspoon black pepper
1 Teaspoon cream of tarter
  -Add this all to the heated oil and whisk it together. It will create a paste.
2 Cups milk
  -Whisk this into the paste in the pan. It will sizzle a bit when you pour it in. Whisk occasionally until it is thick. Be mindful it will stick a bit at the bottom if you aren't paying attention. You have made a white sauce!

8-10 oz grated Cheddar Cheese
  - When the pasta is ready to go, add the grated cheese to the white sauce - Congrats - you just made a simple cheese sauce. When it is melted, add the pasta. Stir together. I like to top it with bread cubes too.

Bake, uncovered in the oven at 350 degrees for about 30 minutes.
